Paper","subitem_description_type":"Other"}]},"item_3_description_6":{"attribute_name":"抄録","attribute_value_mlt":[{"subitem_description":"幼児栄養をより適格に把握するために、昭和47年、52年および57年度の都市近郊幼児の食品・栄養素摂取状況について検討を加えた。対象児は4~6歳児10~25名で、四季の各連続3日間(通年12日間)の食物摂取量を個人別に評量し、食品構成目安量ならびに個人別に算定した栄養所要量と対比して、5~10年間の推移状況を調べ、以下の結果を得た。(1)摂取食品数は1人1日当たり26→29→30種類と増加し、動物性食品数は6→6→7種類へ、植物性食品数は20→23→23種類へ増加し、間食食品数は5→4→3種類と漸減した。(2)食品摂取状況は、10年間に増加したのは肉類のみであり、減少したのは穀類をはじめとする9食品群であり、変動のみられなかったのは豆類、緑黄色野菜および乳類の3食品群であった。摂取比率の平均値は131.2±49.5→100.2±44.1%へ目安量に対するパターン類似率は0.940→0.922へそれぞれ減少した。充足されていないのは穀類、いも類、砂糖類、豆類、緑黄色野菜、その他の野菜および卵類の7食品群である。(3)栄養素摂取状況は、10年間に摂取比率の平均値は115.3±25.6→112.2±21.3%へ、所要量パターンに対するパターン類似率は0.991→0.984へそれぞれ推移し、動物性たん白質とカルシウムの摂取増が大きく、充足されない栄養素は、10年前はビタミンA、B_1およびB_2、5年前はビタミンB_2のみであったが、57年度はエネルギー、鉄およびビタミンCとなり、しかも栄養素摂取上の個人差がやや大となった。(4)摂取エネルギー比については、穀類エネルギー比(38→41→32%)、米類エネルギー比(25→16→18%)、小麦類エネルギー比(13→25→14%)および糖質エネルギー比(59→53→51%)は漸減し、脂質エネルギー比(28→32→34%)、たん白質エネルギー比(13→15→15%)は漸増した。(5)摂取たん白質の質的評価は、動物性たん白質比は53.5→57.9→59.9%と推奨値を超え、たん白価は86(S)→82(S)、アミノ酸価は92(Thr)→91(Thr)、卵価は75(S)→69(S)、人乳価は87(Try)→85(Try)、牛乳価は89(Lys)→88(Lys)へ推移した。(6)動物性脂質比は49.8→51.5→52.0%へ漸増した。(7)対象児の体位の体位推計基準値に対する比率は、身長は99.0±3.5→101.2±4.8→99.1±5.6%、体重94.1±5.3→101.1±7.7→95.7±13.6%といずれも適正範囲にあり、体力評価は3.2±1.8→3.5±0.8→3.0±1.0と中位の成績であった。","subitem_description_language":"ja","subitem_description_type":"Abstract"}]},"item_3_publisher_36":{"attribute_name":"出版者","attribute_value_mlt":[{"subitem_publisher":"県立新潟女子短期大学"}]},"item_3_source_id_10":{"attribute_name":"ISSN","attribute_value_mlt":[{"subitem_source_identifier":"0288-3686","subitem_source_identifier_type":"ISSN"}]},"item_3_source_id_12":{"attribute_name":"書誌レコードID","attribute_value_mlt":[{"subitem_source_identifier":"AN1023987X","subitem_source_identifier_type":"NCID"}]},"item_3_version_type_18":{"attribute_name":"著者版フラグ","attribute_value_mlt":[{"subitem_version_resource":"http://purl.org/coar/version/c_970fb48d4fbd8a85","subitem_version_type":"VoR"}]},"item_creator":{"attribute_name":"著者","attribute_type":"creator","attribute_value_mlt":[{"creatorNames":[{"creatorName":"今泉,
